Vegetarian Salads

There are lots of delicious vegetables that can be used when making a salad. Here are some happy and colourful options:

Carrots, red and yellow bell peppers, corn, cherry tomatoes, lettuce, cucumber, sugar peas, radishes, asparagus, salad leaves and small cauliflower – and broccoli florets. In addition, avocado gives a wonderful rich flavour, as well as contains healthy plant fats.

If you want to freshen up the taste, you can add some pineapple bits or oranges pieces. Grapes and raisins also give a sweeter taste.

The flavour of nuts is always excellent in a salad. You can choose between a wide variety of nuts, like pine nuts, hazelnuts, walnuts (omega-3) and brazil nuts. Almonds also taste great in a salad. 

The healthiest vegetable oils suitable for salads are olive oil and canola oil.

So try getting out you prettiest bowl from the cupboard and make a delicious salad of vegetables you have available, served with a tasteful dressing.
