Vegetable Roll

This is a healthy and tasteful dish made with green leaves, vegetables and dressing.


Carrots, in long strips or ribbons

Red bell pepper, in long strips or ribbons

Sugar peas/beans, ends removed

Pineapple in small pieces

A big leaf of ice burg lettuce or romaine leaf  

Dressing, sauce or almond butter


Gently lay the lettuce leaf on a plate and fill it with the vegetable pieces.

Drizzle with your dressing or some almond butter. 

Adding a little pineapple on the top gives a sweet taste.

Then, roll the lettuce around to make a burrito shape.

To Serve

Serve this beautiful green roll fresh with a glass of carrot juice :-)
