Sprouted Lentil Salad

This salad is an excellent way to get loads of nutritious plant protein. Since lentils are a little crunchy when sprouted, they are excellent paired with some finely chopped colourful vegetables.

Ingredients for 2 small servings

1/2 cup lentils, soaked 12 hours and sprouted 1-2 days

3 tomatoes

1 red bell pepper

2 carrots

6 broccoli florets

1 cup salad greens 

2-4 tablespoons carrot juice or water

Salt and optional seasoning

Plant oil to sprinkle on top by serving (optional)

Chop all the vegetables and place in a food processor together with the sprouted lentils. 

Process until your preferred consistency is reached. Add some carrot juice or water if needed.

Serving Suggestions

Serve this together with a glass of fresh water, some tomatoes and pizza flax crackers.
