Rainbow Salad

This is a colourful delight that makes you happy!

The soft tomatoes and sweet red bell pepper gives this dish an amazing taste and feel. I love the taste of natural vegetables and I regularly enjoy this beautiful dish just as it is, with a sprinkle of sea salt on the top :-)

Ingredients for 2 small servings

2 red bell peppers

2 large tomatoes

4 broccoli florets

2 cauliflower florets

2 carrots

1/4 cup corn kernels

Salt and your favourite flavour, such as lemon juice and seasoning.



Chop the bell pepper, tomatoes, carrots, and the broccoli and cauliflower into florets and steam. Put all the vegetables, except the corn, into a food processor and, with the S-blade, process briefly. Transfer to a bowl and mix with the yellow corn.

Serving Suggestions

Serve this fresh with a tasty dressing and some wholegrain bread. Delicious!
