Green Juice

Green juice can contain a wide variety of fresh vegetables and it is nutritious, alkalizing (while tasting delicious!). Green juicing is growing in popularity all over the world, especially green juices that are made with dark leafy greens, like kale, green collards or swiss chard, due to their high nutritional content and pleasant taste.

Excellent vegetables to use are:

Dark leafy greens, like kale, spinach, celery, broccoli, cucumber, parsley, lettuce leaves and more. Take a look at your market to see the wide variety of green vegetables!

For a fresher taste, try adding some fresh oranges, an apple, some lime juice or, for a special kick, some fresh ginger.

Preparation

Select your favourite veggies, like two celery stalks, several leaves of kale, a broccoli stalk, half a cucumber, some parsley and an apple or pear to sweeten. Divide the vegetables and fruit into smaller parts and run through the juicer.

Serving Suggestions

Serve this delicious, green juice fresh. If it tastes too “green” add some fruit.

*If you want to drink several glasses of green juice throughout the day, you can make a larger batch and keep it in the fridge in a clean glass jar with a lid. Then you will have a glass of green juice on hand whenever you wish :-)

*Vegetable stalks from cabbage, broccoli, cauliflower and other cruciferous vegetables are excellent to juice.

*The vegetable fiber left behind can be added to soups, nut patés or dehydrated into crispy cakes.
