Sunshine Soup

This delicious soup is full of vitamins and healthy ingredients that will immediately make you happy! It is perfect to make when you wish to nourish yourself yet also eat a special treat. This soup can be made with a wide variety of vegetables, so just use the ones you have available, as I have done here. In my kitchen today I had:

2 carrots                                                             Yield, about 1 litre soup

2 white potatoes

4 small broccoli florets

1 slice kohlrabi

4 lettuce leaves

A handful alfalfa sprouts

2 tablespoons almonds

1 tablespoon plant oil

1 tablespoon lemon juice

1 teaspoon sea salt 

1 teaspoon herb seasoning

Pinch pepper

2.5 cups water

In addition, I had plenty of wonderful beets (as I often do!), but since they are so 

colourful and tasty, I quickly decided to make a beet soup all on its own (see it in 

the Soup Menu :-)

Preparation

Peel the vegetables and divide them into bite-size pieces and florets. 

Put the vegetables in the blender and add water, lemon juice, oil, seasoning and nuts.

Blend to a creamy and smooth consistency.

Serving suggestions

Serve the soup in a beautiful bowl and enjoy it with some whole-grain bread.

 

*This soup is so easy to make, so good for you and far more filling than you would think ;-)

*Good plant oils to use are cold-pressed virgin olive oil and canola oil.  

Have fun creating this soup and enjoy the leftovers for breakfast or lunch the next day.
