Marzipan

This home made delight with fresh citrus has just a hint of orange.


Ingredients                                            Yield, 20 small marzipan balls

2 cups almonds (without skins)*

3-4 tablespoons coconut flower sugar

2 tablespoons Happy Delight**

1-2 tablespoons water


Shredded coconut 


*Happy Delight is an all-natural citrus flavour. If preferred, it can be omitted by using a neutral plant oil and adding some citrus drops.


Preparation

Grind the almonds in a nut mill and place in a blender. Add the sugar, oil and blend to a nice and soft marzipan consistency. Add more water if necessary (1/2 teaspoon at a time) and coconut sugar until it tastes perfect! 

Roll little round marzipan bolls and coat in the shredded coconut or form into a delicious marzipan bread.


Serving suggestions

These marzipan balls look elegant arranged on a plate, garnished with orange boats.


*To remove the almond skin, put the almonds in warm water (near bowling) for 

10 minutes and the skins will slide of easily. Rinse the almonds and let them dry 

(12-24 hours) before grinding.
