Spring Rolls


4 rice papers*                            

green lettuce leaves

alfalfa sprouts

2 carrots

1/2 cucumber

1/2 avocado


To Prepare

Gently rinse the rice paper, lay it on a plate and arrange a big lettuce leaf on the moistened paper. Then, add a layer of fresh sprouts, avocado slices and carrot ribbons over the leaf, sprinkle with a tasteful dressing and roll up the leaf. Slice the roll into two pieces and arrange on a beautiful plate.

To Serve

Serve the spring rolls with the rest of the dressing to dip and garnish with some fine strips of carrots and basil leaves :-)

*Rice paper is not raw and can easily be replaced with some collard or cabbage leaf. 

*To get a longer roll, just lay two rice papers beside each other 

  (like a horizontal 8) with the papers overlapping in the middle.
