This is a tasteful sauce made of pine nuts, bell pepper and mushrooms.
Sauce
1/2 cup pine nuts
1/2 cup mushrooms
1/2 cup tomatoes
1/2 cup red bell pepper
1 tablespoon lemon juice
1/2 tablespoon tamari sauce
1/2 tablespoon dulse*, soaked 1-2 minutes
1 tablespoon fresh parsley
Grind the pine nuts in a coffee grinder. Chop the tomatoes, bell pepper and mushrooms. Put all the ingredients, except for the pine nuts, in the blender and blend until smooth. Add the finely ground pine nuts and blend until it is a thick and creamy sauce.
Serving Suggestions
The sauce tastes great as topping to zucchini pasta.
*For a thinner sauce, just add some water.
*Dulse is a dried sea weed rich in minerals that adds salt to the dish.
