Avocado with Vegetable Filling

This is a beautiful way to serve avocado, and the preparation is easy and fun. Just remember to prepare the vegetables before you open the avocados, to avoid the avocado getting brown inside. 

Ingredients                              2-4 portions

2 ripe avocados 

12 cherry tomatoes

1/2 cucumber

1/4 cup corn kernels 

Salt and/or other seasonings (optional)


Rinse the tomatoes and cucumber and cut them into small cubes.

Gently mix them in a bowl with the corn kernels.

Add salt and optional seasonings.

Divide each avocado into two halves, removing the stone. Fill the open spaces with vegetables. 

To Serve

Serve fresh for lunch or as a tasteful appetizer or snack.
