
This is a beautiful, sweet delight with fresh fruit and berries.
Ingredients: 3-4 small plates
Fruit and berries
4 large strawberries
8 small pineapple rings
1 kiwi
Almond crust
1 cup almonds, finely grounded
3/4 -1 cup dates, pitted
Vanilla cream
1.5 cups cashews, soaked 2 hours
1/4 cup water
2 tablespoon agave syrup
1 teaspoon vanilla extract*
*1 teaspoon vanilla extract or seeds from one vanilla bean.
Preparation:
Almond Crust
Blend the almond and dates in a food processor with the S-blade. Add the dates until the mixture starts to hold together, being careful not to over-process. Transfer the crust to a medium bowl and set aside while making the cream.
Vanilla Cream
Blend all the ingredients in a blender to a smooth cream. Add more water if necessary,
just a little bit at a time.
Cakes
Form small crust flowers with a cookie cutter and garnish the cakes with yellow pineapple
rings and a little cream on the top.
