Sushi

Ingredients:             2 portions

2 carrots

1 red bell pepper

1/2 cucumber

dark leafy greens

alfalfa sprouts

1/2 avocado 

Tahini and/or tamari soy sauce

Nori sheet

To prepare

Slice the vegetables into thin ribbons or strips and thinly slice the avocado.

Lay the nori sheet, with the shiny side down, on a bamboo mat or a flat base. With the back of a teaspoon, spread some tahini on the nori sheet.

Then, along the part of the nori sheet that is closest to you, gently lay some alfalfa sprouts and layer with vegetables on top of the sprouts. Add some salt and pepper to taste.

Roll the nori sheet together by using a bamboo mat or just your hands. When the roll is almost made, dip your finger in a bowl of water and moister the horizontal end of the nori sheet. Then finish the roll so the sushi can be sealed like an envelope.

Divide the roll into 5-6 pieces and arrange them on plate.

To Serve

Serve this sushi with a small bowl of tamari sauce for dipping.
