Cashew Milk

These soft nuts blend easily and smoothly into rich, creamy milk.

Ingredients                                                        Yield, 3-4 glasses

1 cup cashews, soaked 4 hours

2-3 cups water

1/2 -1 tablespoon agave syrup

1/2 teaspoon vanilla extract (optional)

Preparation

Rinse and dry the cashews with a paper towel or cloth. Put the nuts in the blender and add the water. Blend until it is the consistency of milk and add sweetener and vanilla and blend once again.

Serving Suggestions

This milk can be used to as you would regular milk, however, is especially nice for a rich, creamy treat like ice cream or it is just as excellent right out of the glass.

*For a sweeter taste, try adding a ripe banana for an even creamier consistency (see picture).

*To make cream, decrease the amount of water.
