Broccoli Soup

This is a beautiful green coloured soup packed with loads of nutrition and protein.

Ingredients                                                   Yield, 2 portions

1 head of broccoli

2 carrots

1 slice kohlrabi

2 white potatoes

1/2 cup green peas

1 small bunch parsley

Fresh leek, green part*

A handful alfalfa sprouts

5 lettuce leaves

3 tablespoons walnuts

1 tablespoon plant oil

1 tablespoon lemon juice

1 teaspoon sea salt 

1 teaspoon herb seasoning

Pinch pepper

 4 cups water 

Preparation

Rinse and peel the vegetables, divide them into florets and bite-size pieces and put them 

in the blender. Add lemon juice, oil, seasoning, water and nuts. Use enough water to cover 

the vegetables and more, as needed, to blend to a smooth consistency.  

Serving suggestions

This broccoli soup is best served fresh with some whole-grain bread :-)

*The beautiful green colour of the broccoli indicates it is rich in chlorophyll and minerals, 

like calcium and iron. In addition, broccoli contains protein. The combination of broccoli and 

green peas in this soup make it very high protein that will keep you satisfied.
