Both the vibrant colours and tastes in this dish will make you happy!
Ingredients for two plates:
2 ripe avocados
2 carrots
2 slices kohlrabi
6 broccoli florets
6 cauliflower florets
8 cherry tomatoes
1 red bell pepper
1 tablespoon lemon juice
1 teaspoon sea salt
Some garlic (optional)
Preparation
Rinse and dry the vegetables (except from the avocado), then chop them or divide into florets.
In the middle of the plate, place a small bowl and nicely arrange the vegetables around it.
Dip
Divide the avocado in two, remove the stone and scoop out the flesh with a spoon.
Puree the avocado with a fork in a bowl. Add lemon, salt and garlic, adjusting a little
more or less to your liking until it tastes perfect!
To Serve
Fill the bowl on the plate with the avocado cream and serve the plate fresh to get
the brightest colours and flavour.
