This is a delicious version of tea cakes with almond crust, vanilla cream and strawberry.
Ingredients: 8-10 small tarts
Almond crust
1.5 cups almonds, finely grounded
1-1.5 cups dates, pitted
Vanilla cream
1.5 cups cashews, soaked 2 hours
1/4 cup water
2 tablespoons agave syrup
1 teaspoon vanilla drops
Preparation:
Almond crust
Blend almonds to a rough meal and add about 1 cup of dates (add more if needed) to the mixture until it holds together. Then, transfer the crust to a medium bowl and set aside while making the cream.
Vanilla cream
Blend all the ingredients in a blender to a smooth cream. Add more water if needed (1/2 teaspoon at a time).
Cakes
Form small crusts with a round cookie cutter (diameter 6 cm) and make the crust as high as you want. Then, add a layer with vanilla cream and top with a beautiful strawberry, thinly sliced.
Serving Suggestions
These strawberry tarts are best served with a nice cup of tea :-)
*You may want to make your own tarts by switching the almonds with walnuts,
the dates with raisins and the strawberries with raspberries or other fruit and
berries. Experiment to find your preference.
