Broccoli Paté

This green paté tastes delicious for lunch and dinner.

Ingredients Yield, 1 bowl paté

3 cups broccoli florets

1/2 cup romaine hearts

1/2 cup walnuts, soaked 6 hours

1/4 cup water

1 tablespoon plant oil

2 teaspoons lemon juice

1 teaspoon garlic powder

1 teaspoon salt

pinch pepper

Preparation:

Rinse and dry the walnuts and place in a blender together with the other ingredients. Add more or less seasoning to taste. Blend until it is a smooth and a beautiful green paté.

Serving Suggestions

Broccoli paté tastes delicious as topping to a salad, spread on crispy wholegrain breads, filling in rolls and as a vegetable dip.

*The paté keeps for 2-3 days in the fridge.

*Broccoli contains wonderful green chlorophyll, vitamin C and calcium in addition to being an excellent iron source.
